5 Reasons to Try Forbici, One of the World’s Top 100 Pizzas, Opening Near Borough Market

One of the world’s best pizzas is heading south. Forbici, the Manchester-born pizzeria named in the Top 100 Best Pizzas in the World, is opening its first London restaurant at 120 Tooley Street in London Bridge, just moments from Borough Market, on Tuesday 27 October.

Here are five reasons to try it.

1. It’s officially one of the world’s best

Forbici has been recognised among the Top 100 Best Pizzas in the World, and it’s one of just two UK pizzerias to hold that title, the other being London’s Crisp. After building a devoted following in Manchester and Sheffield, it’s bringing that award-winning pizza to the capital’s competitive pizza scene for the first time. If you’re a pizza fan who likes to try the best, this is one to add to your list.

2. Marco Pierre White is a fan

Earlier this year, Marco Pierre White, the first British chef to win three Michelin stars, walked into Forbici’s Manchester pizzeria completely unannounced. After tasting the pizza, he called it the very best pizza he’d ever had in his life, then signed the menu and left a personal note for pizzaiolo and master baker Davide Argentino. That’s quite an endorsement.

3. The secret is in the dough

Forbici’s signature is its three-generation Biga dough. Biga is a traditional Italian pre-ferment, and Forbici develops its dough across multiple stages to create a remarkably light, airy, high-rise crust that’s full of flavour without feeling heavy. It combines Neapolitan tradition with careful, almost scientific fermentation, and it’s the reason people travel for it.

4. Pizza cut with scissors

Forbici means “scissors” in Italian, a nod to the Neapolitan tradition of cutting pizza with scissors. Every pizza arrives at the table to be cut in four with Forbici’s signature scissors, which makes the whole experience a little bit theatrical and very memorable.

5. A menu worth exploring

The London menu features Forbici’s speciality, guest and white-base pizzas. Look out for the Provola e Pepe, with San Marzano tomato, smoked provola, black pepper and fresh basil, and the indulgent Porcini e Tartufo, a white-base pizza with fior di latte, porcini mushrooms, Italian truffle sauce and chives. Being so close to Borough Market and the Thames, it’s a great stop before or after a day exploring London Bridge.
